Salad post Mixed greens beets cukes smHey all you vegans out there! Are you being a healthy vegan? I’m looking at your instagram accounts and you look to me like you are eating too much fruit and carbs. I see this all the time. Many people who try being vegetarian and vegan give it up because they become nutritionally deficient. No one taught them how to eat well as a vegetarian. I know I didn’t.

I started in 1987 becoming a vegetarian. I started shopping at the food coop and going to vegetarian pot luck dinners. I bought the moosewood cookbook and used a lot of recipes in there. I love them, but when you look at the whole of the diet, it’s a lot of rice, beans, cheese and carbs. When I look at people’s plates and their overall food intake, it should be more vegetables. That is true for most everyone.

Many vegetarians eat a lot of processed foods too, fake meat products with tofu, tempeh etc. I find these congesting to the sinus and lymph. I’m a singer too so I can’t afford to eat stuff that makes me full of mucus. I don’t tolerate dairy or eggs much, so I eat mostly vegan, not 100%. I try to inspire people to eat fresh, whole foods, unprocessed. You should eats beans, unprocessed. Lentil, adzuki, kidney, white beans, and lima beans are my favorite. I just toss them plain into my salad or a brown rice bowl. Some people say they can’t because they cause gas, then you should just take some carminative herbs with each meal, fennel and peppermint.

I always suggest vegetarians eat two salads per day and at least 2 cups of steamed greens with a cooked meal (like a brown rice bowl). Every meal should have something green in it. I also have one to two all green juices per day and add chlorophyll to my water. Greens have a high concentration of chlorophyll in them and build good blood. This can prevent you from becoming anemic. I got anemic after a couple years of being vegan. My ferritin was low and I was able to double it with just supplementing chlorophyll. I didn’t tolerate iron supplements because they made me constipated.

So I wanted to share today’s delicious salad. I just made this from yesterdays veggies I picked up from the farmers market.

2 cups mesclun greens
2 scallions
2 red radishes
2 small carrots
1/2 finely grated beet
kidney beans for protein
For dressing, I used 1 tsp olive oil, 1/2 lemon juice, 1 tsp ginger juice, 1 tsp spinach juice. sea salt to taste.

It took me 15 minutes to chop and prepare. I hope I inspired you to take the time to eat fresh vegetables and prepare them yourself. The energy and vitality you will feel is great reward for the time spent.

These are my favorite greens. It costs $4 and makes at least 4 salads. So for $1 per day you can have outstanding quality greens that energize your body. People tell me all the time, I can’t afford to buy organic and don’t have the time to prepare my food. That is really not true. It’s all a matter of choice.
